The objective of this agricultural collective was the reanimation of the Noir de Bigorre pig breeding. It was in the mid 1980s that a group of breeders, artisanal butchers and ham-makers undertook the challenge of restoring the reputation of this gradually disappearing activity. Today, thanks to their determination and expertise, the ‘Black Ham of Bigorre’ is now recognized as one of the best in Europe.
