For over a century, 5 generations have transmitted the traditional know-how of cheese production in the heart of the Alps. The Cartier family has established its farm in the Maurienne Valley where Beaufort cheese reigns supreme. In the summer, the large herd of dairy cows grazes the young, fatty grass and flowers of the surrounding mountains. While in winter, the cows are found on the farm, in the valley, feeding mainly on straw. Comes summer or winter, the Cartier family transforms its cow’s milk into an excellent cheese ranging far beyond Beaufort to speciality Tomme or Abondance.
